Baked Fish and Vegetables

Who doesn't love the classic and easy to make the flavorful baked fish and vegetables recipe. As a matter of fact, in less than 30 minutes you'll have your meal on the table and no mess to clean up as you are serving it in the same baking tray.


 Ingredients

3 Potatoes, sliced

3 tomatoes, sliced

1 Green bell pepper, sliced

1 lemon, sliced

1 Fish, any type will do

Seasoning:

1/2 Cup of Coriander and Parsley

1 tsp of ground cumin

1 tsp of ground turmeric

1 tsp of paprika

2 tsp of lemon juice

2 tsp of olive oil or vegetable oil

4 cloves garlic, grated

1/4 tsp  of sea salt 

1 Pinch of ground hot pepper 


Directions

Preheat the oven to 350°F. 

Dice vegetables uniformly. 

Prepare your seasoning.

Using a sharp knife, score your fish on both sides. Coat the fish with the prepared seasoning. Lay parchment paper on a baking tray and place the fish in the center. Coat thoroughly potatoes and green pepper with the remaining seasoning and lay them on both sides of the fish. Add green pepper, tomatoes and half moon lemons on top. Add a little bit of water to the remaining seasoning and drizzle over the top. Cover the baking tray with unbleached parchment paper first then tightly wrap around with aluminum foil. This, will avoid leaching and keeps the fish moist.

Now, place in the middle of the oven at 350F for about 40 min. Once done, let cool down and serve in the same baking tray.

Pizza with Tuna and Vegetables

This tasty and easy homemade vegetable tuna pizza is just amazing. In this recipe, I am showing you the steps to make your own dough and also your own healthy vegetable sauce. No pizza delivery anymore!


Ingredients

Pizza crust:

300g all-purpose flour

1/2 tsp of Salt

1 tsp Yeast

1/4 tsp Sugar

1 cup of milk

1 tsp butter

1 egg

2 tsp olive oil

1/2 tsp dried oregano (optional)


Toppings:

1 cup homemade sauce

1 cup shredded cheese (Cheddar and Mozzarella)

1 Tuna can

1 cup chopped mushrooms

1 cup chopped green pepper

1/2 cup black olives, sliced

1/2 white onion, chopped

1 tsp dried oregano


Directions

Mix the dough ingredients together and knead it thoroughly. Place dough into a bowl, and cover tightly with plastic film and a kitchen towel. Leave to rest for about an hour.

Poke down the risen dough to release air.

Roll dough out into a short stick shape (about ¾ of a baking tray long). 

Now, get a baking tray with parchment paper and transfer the rolled dough on it. Rub your hands with oil and proceed with flattening it by pressing with your hand palms and stretching it towards both sides to reach the tray width then with a fork, poke holes into the crust.

Spread pizza sauce over the crust and add tuna, vegetable toppings, shredded cheese, oregano, and olive oil drizzle.

Place the tray in the oven and allow a baking time for about 20 minutes over 350F heat

Chocolate filled cassava buns (or cassava Pain au Chocolat)







Chocolate filled Cassava buns

For the sake of change, in this recipe, I’m introducing cassava buns as an alternative recipe for the French Pain au Chocolat. According to studies, cassava can help reduce inflammation and promote the beneficial bacteria in our guts. These fluffy and easy-to-make cassava chocolate-filled buns is truly a delight that you’ll definitely love!

 

Ingredients

400g mashed cassava

2 Eggs

1 tbsp. of sugar

9g of yeast

1/2 tsp of salt

50ml vegetable oil

300g all-purpose flour


Directions

Use a large, but handy knife to peel the cassava.

Then dice it and boil it thoroughly.

Mash the cooked cassava, add all the ingredients and mix with flour. Knead well by hand to form a ball (If the dough is so sticky, coat your hands with oil/flour and occasionally add more flour to the dough). Cover it with a plastic film, and a towel and leave it to rest for an hour. 

Now, take off small parts of the dough, then on a separate flat plate, lay on flour, and pat the balls down into flat rounds. Then, sprinkle chocolate chips in the middle and shape them into small roll buns and transfer them to the baking tray. Continue with the same process until the dough is over. Leave to rest again for about half an hour.

When the dough has risen enough, Brush the buns with a mixture of milk and egg yolks.

Bake at 350F for about 30 minutes until golden brown then serve with tea or coffee.

Moroccan crepes or pancakes (known as Baghrir or Khringo)







Moroccan Crepes

This recipe is a traditional Moroccan pancake. It’s easy and quick as there is no need to wait for the dough to rise A perfect one, should be round, spongy in its texture, and with hundreds of holes evenly spread all over its surface.


Ingredients

2 cups of fine semolina 

3 cups of warm water

2 cups and a ½ cup of milk

1 cup of all-purpose flour

1/2 teaspoon salt

1/2 teaspoon sugar

1 teaspoon yeast

1 teaspoon baking powder


Directions:

In a blender, pour warm water, and milk, add the semolina, all-purpose flour, salt, sugar, and yeast, and process to blend. Then add the baking powder and blend again. A perfect batter should be thin but consistent.

Cooking the pancake:

Heat a non-stick skillet over low heat. Use a ladle to pour the batter and spread it evenly into a circle.

Once holes are spread evenly over the pancake surface, flip it to the other side for only a couple of seconds then transfer to a dry towel. Repeat the same until the batter is over.

Serve with olive oil and honey.

Chicken skewers with rice

This Chicken skewers with rice recipe is one of my favorites. In less than 30 minutes, you'll have succulent skewers thanks to this easy and flavored recipe. 


Ingredients

-Chicken Skewers:

1 pound or 2 chicken breasts

2 tablespoons olive oil or vegetable oil

4 garlic, grated

1/2 teaspoons ground cumin

1/2 teaspoons paprika

1/4 teaspoon salt

1/2 teaspoon turmeric

Pinch of hot pepper

1 tablespoon oregano

1 tablespoon vinegar


Rice:

-1 cup rice for 2 cups boiling water (basmati rice preferred)

2 tablespoon olive oil or vegetable oil

1 onion, diced

2 garlic, minced

1/2 teaspoon ground cumin

1/2 teaspoon turmeric

1/2 teaspoon paprika

1/4 teaspoon salt

A pinch of hot pepper

A half bowl of mixed corn, chopped green beans, green peas, and diced carrots


Directions 

Cut the chicken into cubes. Mix chicken and spices in a medium bowl.

Boil rice in a pot. The rule of thumb is 1 cup of rice to 2 cups of water to make sure the rice is cooked just right. Once cooked, leave it to drain well. Now, get a pan over medium heat and put onion, and spices, and cook for about 5 minutes, then add a half-mixed cup of diced carrots, green peas, corn, and diced green beans. Cook for another 5 minutes, add rice and stir all together. 

Thread chicken onto skewers and grill to medium-high. 

When done, serve along with sauce (find links below).

Making vegetable tomato sauce or How to trick a child to eat vegetables







 Vegetables tomato sauce


This sauce is a mixture of tomatoes, broccoli, spinach, onion, ginger, and garlic. It is very healthy and also an alternative subtle way to get your child into vegetables. Simply add it to his/her favorite meal. In my case, I add it to his favorite dish which is pasta.


Ingredients

1 chopped onion

5 chopped tomatoes

 A bunch of chopped broccoli

 A bunch of chopped spinach

3 tablespoons olive oil, or vegetable oil

5 garlic cloves, minced

A block of Ginger minced

1/4 tsp salt

1/2 tsp paprika 

1/2 tsp turmeric

1/2 tsp cumin

Pinch of hot pepper

3 tablespoons tomatoes in puree (organic, no added salt, optional)


Directions

Place all the chopped vegetables along with water and blend it until smooth.

Transfer to a pot and add spices and oil to tomato sauce. Simmer for about 15 min until the sauce is thickened.
