Chicken and vegetables spring rolls
Loaded with chicken, carrots, zucchini, and red pepper, these spring rolls are so tempting as they are so crunchy and taste just amazing! You can serve it with sweet and sour dipping sauce.
Ingredients
1 Onion
1/2 cup cilantro
1/4 tsp salt
1/4 tsp hot pepper
1/2 tsp cumin
1 tsp ginger powder
1 tsp paprika
2 cups chicken breast, cubes
1 cup shredded carrots
1 cup shredded Zucchini
1 cup red pepper
2 tbsp. cream cheese
Spring roll wrappers
Directions
Heat oil in a large skillet over medium heat. Add onion and cilantro and cook for 1 minute.
Add spices, red pepper, carrots, and zucchini, and cook for 2 minutes. Add chicken cubes and cook until everything is well combined and tender. Once done, place the mixture aside.
Place spring roll wrappers on a flat surface. Top each wrapper with a portion of the mixture. Fold the wrapper over the filling, then tuck in the sides and roll up. wet the end and roll it up to seal. Place spring rolls on a baking sheet put them in the oven and bake for 10 minutes or until golden.
