A traditional recipe for homemade Moroccan bread with grains on top. Bread it a staple in every home in Morocco and it is called Khubz. In this recipe I am making it with all-purpose flour mixed with semolina.
Ingredients
600g all purpose flour
200g fine semolina
1/2 tsp salt
1/2 tsp sugar
1 tbsp. yeast
2 tbsp. oil
3 tbsp. milk
1 tbsp. butter
3 cups warm water
Grains to garnish
Directions
Combine the flour and semolina, milk, oil salt in a bowl. Make a well in the center and add the yeast and sugar. Add some water and combine all ingredients.
Knead the dough until smooth. While kneading, add flour or/and water as needed to ensure the dough is pliable but not sticky. Add butter and combine it well with the dough.
Cover with plastic film and a towel and leave to rest for an hour.
After resting, uncover, poke the dough with your fingers to release air and start shaping dough into small balls. Then pat them into flat round buns and cover again and leave to rise for about an hour.
Preheat your oven to 350F. Once hot, brush the buns with water and garnish with grains, transfer the buns into the oven and bake for about 30 mn.
