Moroccan Loubia (beans) is a super simple white bean recipe. It is packed with a lot of flavors. And if you are a vegan that will be one of your favorite dishes. Try it you will certainly like it.
Ingredients
3 Cups Dry White Beans
5 tbsp. vegetable oil
1 Large Onion, diced
1 cup of fresh tomato purée
5 Cloves Garlic, grated
1/2 Tsp. Salt
1/4 tsp hot peppers
1 tsp ground ginger
1 tsp. ground Cumin
1 Tsp. ground Turmeric
1 Tsp. paprika
1 Cup Fresh Chopped Parsley and cilantro
3 tbsp. of canned tomatoes sauce
4 Cups of water or more
Directions
Rinse the beans. Place in a container filled with cold water and allow to soak overnight.
Heat the vegetable oil in a pot over medium-high heat. Add the onions, garlic, ginger, turmeric, paprika, cumin, hot peppers, and salt. Cook until the onions are translucent. Add water, drained beans, and herbs and allow to cook a few minutes more, then add the fresh tomatoes purée. Allow cooking until beans are tender. Add a couple of canned tomato spoons and cook for about 10 min more.
Garnish with jalapeño, and parsley leaves and serve with bread and a salad.
