Baked eggplant is an amazing alternative way to cook this large vegetable. The most common recipes are about frying it, but it does not have to be the only way. Once baked it becomes tender and easily melts in your mouth. Try it! You'll like it for sure!
Ingredients
Eggplants.
Diced Tomatoes.
Chopped parsley.
Shredded mozzarella cheese for topping.
Olive oil.
Garlic, minced.
Salt and pepper, cumin, paprika
Directions
Preheat the oven to 350F.
Cut eggplant in half.
Mix olive oil with diced tomatoes, chopped parsley, salt, pepper, and minced garlic. Put the mixture on top of each eggplant.
Add shredded mozzarella cheese on top.
Bake for 30 minutes and serve!
