Moroccan Chicken Tagine


 Moroccan Tagine

Tagine dish is a staple recipe in Morocco and in north Africa in general. Tagine refers to the vessel which is made of clay and it has a circular shallow base and a cone-shaped lid that plays the role of preserving the moisture and the flavors.


Ingredients

- 2 chicken thighs

- 1 cup of cilantro and parsley

- 2 tbsp of garlic 

- 1 tbsp of turmeric

- 1 tbsp of ground ginger

- 1/4 tbsp of black pepper

- 6 tbsp of vegetable oil

- 1/2 tbsp of salt

- 1 Chopped onions

- 1/2 of green olives

- 2 Potatoes

- 2 Carrots

- 1 tomato


Directions

In a large bowl combine: the chopped parsley and cilantro, garlic, turmeric, ginger, salt, black pepper and oil.  Mix everything well and rub the chicken with the mixture. Cover and refrigerate for 1 hour.

In the tagine, drizzle vegetable oil, add chopped onions, stir and cover.

when onions are translucent, add chicken on top. Add a little bit of water, vegetables and reduce the heat to low. Allow enough time for the chicken to cook well then remove the lid while still on low heat until the sauce has thickened.

Serve immediately to eat directly from the tagine with bread!
