Moroccan Harira Soup Recipe

Moroccan Harira Recipe with Veal:


I can't stop making this Moroccan Harira soup! The whole family loves this soup recipe! This soup is very easy to make and incredibly flavorful!  It's so delicious you'll cook it again and again! I show you how to make this  Moroccan Harira soup with a unique taste and super easy steps!  I can eat this soup every day! 


Ingredients

- 1 cup dried chickpeas, soaked overnight

- 1/2 cup lentils

- 1/2 cup peeled dried fava beans

- 1/2 pound veal meat, cubed

- 1 onion, finely chopped

- 3 teaspoons tomato puree

- 1/2 cup chopped fresh cilantro

- 1/2 cup chopped fresh parsley

- 2 tomatoes, diced

- 1/2 cup diced celery

- 1 teaspoon ground ginger

- 1 teaspoon ground turmeric

- 1/2 teaspoon ground cinnamon

- 1 teaspoon ground cumin

- 1/4 teaspoon ground black pepper

- 1 teaspoon paprika

- 6 tablespoons vegetable oil

- Salt to taste

- Lemon wedges, for serving


For the Flour Mixture:

- 1 pinch dried yeast

- 1/2 cup durum semolina

- 1/2 cup all-purpose flour

- 2 cups water


Directions:

1. In a large pot, heat the vegetable oil over medium heat. Add the cubed veal meat, salt, ground ginger, ground turmeric, paprika, ground cumin, and ground black pepper. Cook for 5 minutes until fragrant.

2. Add water and cook the meat for 15 minutes.

3. Drain the soaked chickpeas, lentils, and fava beans, and add them to the pot along with the mixture of tomato, onion, chopped cilantro, chopped parsley, and celery. Stir to combine.

4. Bring the mixture to a boil, then reduce the heat to low and let it simmer, covered, for about 1 hour, stirring occasionally.

5. In a small bowl, mix together the dried yeast, durum semolina, all-purpose flour, and water to create the flour mixture and let rest for half an hour.

6. Gradually add the flour mixture to the harira, stirring constantly to prevent clumps from forming. Cook for an additional 10 minutes, stirring occasionally, until the soup has thickened further.

7. Serve the harira hot with lemon wedges on the side for squeezing over the soup just before eating.

Homemade French Croissants

Ingredients

3 cups All-Purpose Flour

2 teaspoons Dry Yeast

1 cup Milk

1/4 cup Sugar

1 teaspoon Salt

2 tablespoons Butter (for the dough)

1 cup Cold Butter (for laminating)

1/4 cup Cold Water

1 Egg (for egg wash)

Chocolate or Almond Paste (optional, for filling)


Directions:


Dissolve sugar in warm milk, add yeast, and allow to sit.

Combine flour and salt in a bowl, cutting in 2 tablespoons of butter.

Mix the yeast mixture and cold water.

Knead the dough until smooth, then refrigerate for 1 hour.

Roll out the chilled dough and laminate with a cold block of butter.

Fold and repeat the lamination process 3 times, chilling between folds.

Roll out the laminated dough, cut into triangles, and shape into croissant.

Place on a baking sheet, let them rise for 1 hour, and preheat the oven to 400°F (200°C).

Beat the egg, brush it over the croissants, and bake for 15 or until golden brown.

Optional: For filled croissants, add chocolate or almond paste before rolling.

Palestinian Knafeh Recipe



Treat yourself with the famous Palestinian kanafeh, where every golden, crispy layer tells the story of a rich culinary heritage. This dessert recipe combines the richness of creamy Akawi (or Mozzarella) cheese, creating a delicate balance between sweet and savory flavors. When the kanafeh comes out of the oven, the scent of freshly baked kanafeh fills the air. With every bite, you will be transported to the bustling streets of Palestine, where the scent of freshly baked kanafeh wafts through you, and the warmth of hospitality envelopes you. It's more than just a dessert; It's a celebration of culture.


Ingredients


 Phyllo dough - 1 lb
 Akawi Cheese (or mozzarella) - 2 lbs
 Butter - ½ cup
 Orange food coloring - 1 tbsp
 Water - 2 cups
 Sugar - 3 cups
 Rose water - 1 tbsp
 Orange blossom water - 2 tbsp
 Crushed pistachios - ½ cup

Directions

1. Shred Akawi or Mozzarella cheese and soak in a bowl of water for about an hour to remove the salt. After soaking, be sure to let the cheese drain and dry.
      
2. Cut the dough into small pieces. To make it as thin as possible, you can use a food processor.
3. Melt butter in a bowl and let cool.
4. Next, add the orange food coloring to the butter until it is bright orange.
5. Pour the melted butter into the thin phyllo dough and rub the butter into the phyllo dough using your palms and fingers until completely combined.
6. Cover the bottom of the pan or baking dish with ⅓ of the dough and press down.
7. Press the cheese pieces down on top of the dough, distributing them evenly.
8. Place the remaining dough on top, making sure the cheese is completely covered.
9. Bake for about 35 minutes until the cheese is melted and the dough is golden brown.
10. Meanwhile, prepare the syrup by adding water and sugar to a large pot and placing over high heat. Stir until the sugar is completely dissolved.
11. Add the rose and orange blossom water to the pan and reduce the heat to low.
12. Allow the syrup to heat for about 7 minutes, until it is slightly thicker. 
 13. Remove syrup from heat.
14. When the Knafeh is cooked, remove it from the oven and transfer it to a serving plate.
13. 15. Pour warm syrup generously over the Knafeh and sprinkle with chopped pistachios.

Mussels recipe

There are various ways to cook mussels. This is my favorite as it's so easy and can be ready in no time!

Ingredients

1kg mussels 

2 tablespoons olive oil

3 cloves garlic minced.

1 Tsp cumin

1 Tsp Turmeric

1Tsp Paprika,

1 onion, chopped. 

2 Tomatoes diced.

1 Tsp salt

1 Tsp pepper

1 cup of chopped parsley 

Directions

Sautee the onion for a short while and then add the rest of the ingredients.  Toss the mussels. Add water and then stir to incorporate everything. Lower the heat to medium, cover with a lid, and let simmer for 15 minutes.

How to make omelet









Omelets are perfect for breakfast, brunch, lunch, or snacks as well. They are healthy, easy, and quick to make.

Ingredients

 3 eggs

1/4 tsp pepper

1 cup spinach leaves

1 tsp vegetable oil

1/2 tsp salt

3 Tbsp. cream cheese

Directions

Beat eggs in a bowl and stir in spinach leaves and cream cheese. Add salt and pepper and set aside.

Coat skillet with oil and place over medium heat. Add in the egg mixture and cook for about 3 minutes. Flip the other side and continue cooking for about 2 minutes or until it's firm to the touch.

Transfer gently with a spatula onto a platter. Garnish with parsley.

Chicken and vegetables spring rolls

Loaded with chicken, carrots, zucchini, and red pepper, these spring rolls are so tempting as they are so crunchy and taste just amazing! You can serve it with sweet and sour dipping sauce.

Ingredients

1 Onion

1/2 cup cilantro

1/4 tsp salt

1/4 tsp hot pepper

1/2 tsp cumin

1 tsp ginger powder

1 tsp paprika

 2 cups chicken breast, cubes

1 cup shredded carrots

1 cup shredded Zucchini

1 cup red pepper

2 tbsp. cream cheese

Spring roll wrappers


Directions

Heat oil in a large skillet over medium heat. Add onion and cilantro and cook for 1 minute. 

 Add spices, red pepper, carrots, and zucchini, and cook for 2 minutes. Add chicken cubes and cook until everything is well combined and tender. Once done, place the mixture aside.


Place spring roll wrappers on a flat surface. Top each wrapper with a portion of the mixture. Fold the wrapper over the filling, then tuck in the sides and roll up.  wet the end and roll it up to seal. Place spring rolls on a baking sheet put them in the oven and bake for 10 minutes or until golden.

How to make maple pancakes

 














Ingredients

4 cups flour

4 tsp maple syrup

1/2 tsp baking powder

¼ cup butter, melted

1/2 tsp salt

4 eggs

1/2 cups milk


Directions

Combine flour, baking powder, and salt in a bowl. In another bowl, whisk eggs, melted butter, milk, and syrup.

Add dry ingredients to the mixture and whisk until smooth and well blended.

Spray oil on a skillet over medium heat.  Pour a batter of dough and wait for bubbles to form. Then flip to the other side until golden. Serve with maple syrup and berries.

Summer is here, so let's get started with these 6 amazingly simple and healthy juice recipes. They are all sweetened naturally with fresh fruits, no sugar added. So let's get started with these refreshing, immune-boosting drinks. 


Ingredients


For the Green juice:

1/2 large cucumber, cut into quarters.

1/2 lemon, (remove the peel) cut into quarters.

Few mint leaves to taste


For the Yellow Juice:

1/4 of a fresh pineapple, cut into quarters.

1/2 Mango, cut into strips.


For the Dark red Juice:

2 medium beets, boiled and cut into quarters.

1 medium apple, cut into quarters.


For the Purple Juice:

1 cup blueberries

1 Banana, sliced.


For the Orange Juice: 

1 orange, quartered (remove the peel)

1 carrot


For the Bright Red Juice:

Couple of watermelon quarters

1/2 Lemon (remove peel to avoid bitterness), cut into quarter.


Directions


Put the ingredients of each one of these recipes into a blender, add water, and voilà! It’s that simple!

Learn how to make Baked Eggplant Recipe














Baked eggplant is an amazing alternative way to cook this large vegetable. The most common recipes are about frying it, but it does not have to be the only way. Once baked it becomes tender and easily melts in your mouth. Try it! You'll like it for sure!


Ingredients


Eggplants.

Diced Tomatoes.

Chopped parsley.

Shredded mozzarella cheese for topping.

Olive oil.

Garlic, minced.

Salt and pepper, cumin, paprika

 

Directions


Preheat the oven to 350F.

Cut eggplant in half.

Mix olive oil with diced tomatoes, chopped parsley, salt, pepper, and minced garlic. Put the mixture on top of each eggplant.

Add shredded mozzarella cheese on top.

Bake for 30 minutes and serve!

Stuffed Brioche Buns, No butter, No eggs, No rise


Stuffed Brioche Buns


Even though eggless and with no butter, this super brioche recipe is easy to make and tastes authentic! Stuffed with chocolate or cheese, these flavorful brioche buns are the perfect option for amazing breakfast treats!


Ingredients

5 cups of flour

2 cups of water

1 tbsp of yeast

2 tbsp of sugar

1 tsp of salt

3/4 cup of vegetable oil

1 egg yolk

2 tbsp of milk

50 g sesame seed

50 g almond chips


Directions

In a bow, put water, salt, yeast, sugar, and 2 cups of flour. cover and set to rest for about 10 min. Then add to 3 cups of flour and oil, mix everything up, and knead until you get a nice ball of dough. 

Coat your hands with oil and start forming small dough balls. Arrange them on a baking sheet and proceed with fillings. Half of them filled with chocolate chips and the other half with cream cheese.

 Preheat the oven to 350 ° F. Brush the brioches top with a mixture of egg yolk and milk then garnish with sesame seeds or almond chips. Bake for 30 minutes. Et voilà!

Moroccan Chicken Tagine


 Moroccan Tagine

Tagine dish is a staple recipe in Morocco and in north Africa in general. Tagine refers to the vessel which is made of clay and it has a circular shallow base and a cone-shaped lid that plays the role of preserving the moisture and the flavors.


Ingredients

- 2 chicken thighs

- 1 cup of cilantro and parsley

- 2 tbsp of garlic 

- 1 tbsp of turmeric

- 1 tbsp of ground ginger

- 1/4 tbsp of black pepper

- 6 tbsp of vegetable oil

- 1/2 tbsp of salt

- 1 Chopped onions

- 1/2 of green olives

- 2 Potatoes

- 2 Carrots

- 1 tomato


Directions

In a large bowl combine: the chopped parsley and cilantro, garlic, turmeric, ginger, salt, black pepper and oil.  Mix everything well and rub the chicken with the mixture. Cover and refrigerate for 1 hour.

In the tagine, drizzle vegetable oil, add chopped onions, stir and cover.

when onions are translucent, add chicken on top. Add a little bit of water, vegetables and reduce the heat to low. Allow enough time for the chicken to cook well then remove the lid while still on low heat until the sauce has thickened.

Serve immediately to eat directly from the tagine with bread!

Stuffed Peppers with ground beef and rice


Stuffed Bell Peppers


You might consider Stuffed bell peppers recipe a cliché. But for me it brings a lot of lovely childhood memories.


Ingredients:

300g ground beef

Green bell peppers

2 tbsp uncooked rice

1 can tomato sauce

2 tbsp garlic 

1 egg

1/2 tbsp  paprika

1/2 tbsp  cumin

salt and black pepper to taste


Direction:

Preheat oven to 350 F.

Cut in a half and remove the seeds of the bell peppers. Place them on a baking dish.

In a bowl, mix all the ingredients. Stuff the mixture into each hollowed pepper. Coat the baking dish with a layer of tomato sauce and add the stuffed peppers on top.

Place in the oven and bake for one hour. Take them out and sprinkle cheddar cheese on top of the bell pepper and return to oven 5min.  Then serve with tomato sauce on the side.

Easy Fried Quail Recipe




Quail are types of birds that are easy and quick to cook. Impress your friends and  family members with this simple fried quail recipe featuring a wonderful onion and tomato sauce.

Ingredients

7 quail

1 Large Onion, chopped

1 Large Tomato, chopped

1 tbsp grated ginger

2 tbsp minced garlic

1/2 tsp turmeric

1/2 tsp paprika

1/2 tsp cumin

1/2 tsp graham masala

1/2 tsp ginger powder

pinch of hot pepper

Salt to taste

1/2 cup vegetable oil

 Dried basil leaves 


Directions

Cut each quail in half. Combine with spices (1/4 tsp salt, pinch of hot pepper, 1/2 tsp turmeric, 1/2 tsp ginger powder)

In a large skillet, put oil, turn heat to high and sauté quails until cooked through. Remove to a platter and keep aside.

Using the same oil on the skillet, put onions, ginger, garlic,1/4 tsp salt, hot pepper, 1/2 tsp turmeric, 1/2 tsp cumin, 1/2 tsp paprika, 1/2 tsp graham masala, dried basil leaves and tomato, stir for a while then add fried quails then a 1/2 cup water. Cook, until sauce is thickened. Serve immediately and  garnish, if you like, with herbs.
